Chicken Alfredo Pizza

I’m happy. Oh so very happy.

My husband is the best guy ever. For my birthday he said I could splurge and buy not 1, but 2 pairs of flip flops, pricey (and beautiful) teal nail polish and a Vera Wang clutch.

Then he surprised me by coming home early yesterday (my actual birthday) and he bought me Tina Fey’s book Bossypants!

Tonight he took me to Coldstone Creamery for dessert. Then we hit up our local Trader Joe’s, which I can say now I have become dangerously obsessed. In fact, I’m munching on some seriously delicious white cheddar popcorn right this second.

Ohhhhhhhh boy, I should stop.

Yeah, I got a little off track. I made Chicken Alfredo Pizza tonight for dinner and it was so yummy! The crust was the PERFECT crispiness and the toppings were so blessedly covered in alfredo sauce and melted mozzarella cheese that I practically wept. Sorry, I just really love your normal Chicken Alfredo and I also really love pizza, so this was awesome in my belly. It also took literally no time to cook, as the hubs cooked the chicken last night for me. What a doll. I told you he is the best guy ever.

I seriously think I am the queen of pizzas.

The In-Laws came for dinner

Happy Friday!!! Oh myyyyyy ggooosssshhhh I am so happy that it’s the weekend.

We had the hubs’ parents over for dinner tonight. I got off work early and went to work making the infamous Buffalo Chicken Pizza (are you tired of it yet?) and a new one I haven’t tried before.

Let me introduce you to the Hawaiian Pizza:

This was just refrigerated pizza crust, pizza sauce, mozzarella cheese, ham slices and pineapple wedges.

And it was SO tasty. I had 3 pieces and was seriously considering eating more of it. The thought of plating 3 slices and then taking the rest of the pie to my seat crossed my mind.

But I decided that would be mean, and besides what good hostess hogs the food?? Isn’t that a crime?

Oh hey Buffalo Chicken Pizza. I see you there, trying to be relevant. Trying to be look new and fresh, like we haven’t already featured you twice on here.

I know your game.

I’ll take the time now to mention that the pictures are all filtered in Antique mode. My food was a lot more vivid than these portray… I just like to mix things up.

Grilled Banana Sundaes

If you haven’t tried a grilled banana sundae, you should do it right now. It’s a quick recipe and is a seriously yummy treat. I bought tiny waffle bowls to limit the ice cream consumption.

But I was full anyway, from eating that entire Hawaiian pizza.

This isn’t my first time making Calzones, but I think it’s my best.

I went a little lighter on the cheese and added olives this time.

Don’t be afraid of that before picture, I promise it turns out to be all completely, incredibly, pizza-is-jealous kinds of delicious.

That’s a thing.


I just love me a good dough covered in melted butter and parmesan cheese, then stuffed with sausage, cheese, pepperoni, olives (and did I mention cheese?), baked in a nice 375 degree oven.

Hoooo boy, it is a good combination.

Buffalo Chicken Pizza

This is what happened when I let the hubs take a picture of dinner while I cleaned.

I seriously need a fancy pants camera.

This is just bad.

On a better picture note, I also made cupcakes! We have some friends over to watch the NFL Draft and I had some leftover chocolate cupcake batter from my Easter Cadbury Egg cupcakes.

I think they are so cute!! They remind me of these cupcakes that I see all over the internet lately. I should have dyed the frosting aqua!

Spicy Chicken and Pepper Jack Pizza

This is what my night looked like.

Frankly, I was a little afraid of both. On one hand, we were under a tornado watch. It was blacker than night outside and it started hailing.

(Now, the sun is peaking out so I am a little less scared.)

On the other hand, I had a spicy chicken and pepper jack pizza in front of me. Onions, peppers, salsa, pepper jack cheese. Owwwwwwwww. I admittedly added some mozzarella cheese in there to kind of chill it out. It did the trick. The fire alarms in my mouth were only slightly going off.

But if you think about it, wouldn’t you rather those go off than the tornado sirens?

Cheesy Pepperoni Pizza Quick Bread


I love bread. And I like pizza. But I never thought to mix them together…

…until now.

Cheesy Pepperoni Pizza Quick Bread

My love for bread and all things dough-y started from childhood. My mom actually used to laugh and tell me that’s why she named me Kerry. You know, “Ba-KERRY”…..bakery. I just love anything to do with risen dough. My sister in law actually just got one of those automatic bread makers and I am INSANELY jealous. She can have perfectly concocted bread at her disposal… whenever she wants, at a mere press of a button. That sounds like heaven on earth.

I haven’t always been a pizza lover though. That has sprung up recently. I used to be allergic to dairy (WHAT!) and couldn’t partake in cheesy, buttery pizza like everyone else, so I just kind of resented it. Sometimes I would order it from Domino’s without cheese, but it was basically eating a glorified breadstick and not worth the money.

Besides, everyone just made fun of me.

But now. Oh, NOW I can eat everything. So the second I saw this recipe on Picky Palate, I knew I had to have my hand at it. I think I managed to produce a pretty decent loaf of pizza bread for my first go-around. The top got a little burnt, but I mostly blame that on my 1980’s oven that my apartment thinks is still in good shape. Seriously, it’s a nightmare.

The inside is moist, chewy and definitely cheesy. The pepperoni is perfectly cooked and the sauce adds just enough liquid to break up the dense batter. I seriously will make this again…. hopefully our new apartment comes furnished with an oven from the 90’s. Even that will be an improvement!

Yeah. This was good. (Just ignore the burnt pieces.)



My house smells so good.

Like 2lbs of cheese, meat and dough cooking in unison to make me a delicious dinner. An unhealthy dinner. But it will be fantastic, I’m sure of it.

Yes, I’m already blogging about it.

Yeeeeahhhhhhhhh, this was awesome.

It made 4 servings, so that’s good news for the hubs. We live so close to work that he comes home for his lunch and can just throw one in the oven. Unfortunately for me, all I have is a microwave at work that barely heats frozen dinners to warm.

Pepperoni and Green Pepper Pizza


Mmmm, this was sooo good, so I’m thinking I’m definitely on a homemade pizza kick or something. We used the Boboli pizza crust, Mexican shredded cheese, pepperonis and green pepper. Then I sprinkled it with some Seasoning salt. It was pretty yummy. The cheese just kind of melted together in this supercheese layer which was impossible to cut, but I think we managed. I really liked the consistency of the cheese, so I definitely think we won’t change a thing about this recipe! Except maybe we will try seasoned beef next time for more of a “taco” pizza. Yum!

Buffalo Chicken Pizza

On a whim, I decided to make Buffalo Chicken Pizza for lunch. I think it turned out marvelously. It could have been a little hotter, but I used the same hot sauce to make the Buffalo Chicken Dip for the Superbowl and it was so hot I could barely stand it. This definitely could have withstood some more heat. But it was so delicious. And I made it myself!!!

– Boboli Original Pizza Crust
– Ranch Dressing¬†(I didn’t have any on hand, so I used a packet of Ranch mix, 1 cup milk and 3/4 cup mayonnaise)
– 3 tbsp butter, melted
– 2 tbsp hot sauce (or more!)
– 2 boneless, skinless chicken breasts
– Shredded cheddar cheese
– Shredded mozzarella cheese

1. Preheat oven to 450 degrees F.

2. Cook chicken in a skillet until cooked through. Shred or cut into pieces.

3. Mix butter and hot sauce in a bowl, and add chicken. Stir until coated.

4. Spoon ranch dressing mix over pizza crust. Layer with chicken mixture and add the shredded cheeses.

5. Place pizza on a baking stone and cook for 10 minutes, or until cheese is melted.

Mexican Fiesta Salad Pizza

I totally forgot that I made this the other night! The recipe was really easy and fast. Plus, it involved crescent rolls and those are my favorite things ever. Yummy. And it called for ground turkey as opposed to ground beef, and I was so shocked that I could not taste the difference. Ground turkey is so much healthier for you, too, so I feel pretty pleased with myself. We are making some ground turkey burgers tonight, so I am excited to see how that tastes without other flavors infused with the meat.
