Weekly Menu

Here goes my first week of making food from recipes approved by the American Diabetes Association!

Let’s see how I do!

WEEK 8/22 – 8/26
Monday – W.W Honey Mustard Pork Chops
Tuesday – Sweet Spice Rubbed Chicken
Wednesday – Tex-Mex Pork Chops
Thursday – Skillet Chicken with Tomatoes
Friday – Stuffed Peppers


I’m not planning meals for Saturday and Sunday because this week we are only shopping for meals to last us the week before pay day.

Diabetes is expensive and our wallets are sad.

I am itching to go to Barnes and Noble (there is no more Borders conveniently down the road…) and check out the Diabetes cookbooks, but the hubs is quick to remind me of the internet and then show me our bank account. I know, I know. I just like seeing things in front of me.

Weekly Menu

I tried to find mostly Weight Watcher meals for next week since I bought the cookbook and haven’t actually made anything out of it. I also dug out some old Pampered Chef recipes to use as well… but I could not find any original recipes online for these! I can’t believe there isn’t an archive for this stuff. So I will include the recipe on each post for you.

WEEK 8/8 – 8/12
Monday – W.W Cheddar-Stuffed Burgers and W.W Oven Fries
Tuesday – W.W Honey Mustard Pork Chops, broccoli & W.W Scalloped Potatoes with Cheese
Wednesday – W.W Chicken with Rice
Thursday – P.C Pasta & Sausage Skillet
Friday – P.C Chicken Fajitas & Spanish Rice (I’ve made the rice before)

This is all I have right now, because I am always behind on my days and weekends are always so up in the air anyways.

Ps: I wish the hubs liked veggies more.

Weekly Menu (& my love for sandwiches)

Okay, so I’ll come right out and say it. You might see a theme in the menu choices below.

If you don’t understand, the theme is that my husband and I love sandwiches.

And I don’t just mean we fancy them every once and a while.

I mean, give us the option to choose fast food for dinner and we will pick Bread Co (Panera), Subway or a trip to the deli before any other fast food restaurants.

Every time.
(except maybe Taco Bell…. so sue me.)

At one point in my life, I actually took this picture of my meal because I was so excited. And it is still saved on my computer.

I want one now.

Put stuff between 2 slices of bread and hand it to me, and we will be the best of friends.
(maybe not literally, some people are creepy.)

Saturday – Corn on the Cob Cupcakes for my Grandpa’s 90th birthday cookout! I love family.
Sunday – Sloppy Joes (what can I say, I’m a kid at heart)

Weekly Menu

This week, I am making some recipes that we’ve had in the past. I want to see if I can tweak them to more our liking and then actually like the results! We will see how this goes!

The hubs and I also do not have to work until Thursday, so this will be a fun opportunity to tackle some of these together. I love togetherness!

Weekly Menu

I feel like it has been ages and ages since I’ve cooked dinner. Which is probably because that’s a completely true statement.

Between packing, moving, unpacking and generally becoming clinically insane… I haven’t had time to breathe, much less cook… but I am back! I scoured over the Pillsbury website and tried to find some interesting recipies to try in my brand new kitchen. I feel pretty good about my choices and am looking forward to getting back in the kitchen!

It’s also my birthday this week! The big 2-4. I don’t have any major plans, but the hubs is taking me out to dinner and I love him to pieces.

Can you believe it’s May? Well okay, May is tomorrow, technically. Regardless… I am planning meals for MAY. Where has this year gone?? Thank god we are entering Springtime finally; I have needed this weather.

Yesterday was the epitome of wonderful when I got off work. Sunny, semi-chilly and blustery.

Jacket-wearin’ weather.

Or a thick pretty cardigan.

I love cardigans.

Anyway, hello food blog. I apologize for getting off track, but I went window shopping in my head. This in particular had me slightly sidetracked.

Weekly Menu

Time for a new week of meals! This is seriously my favorite thing to do. I compile recipes all week as I traipse through food blogs, but when it comes time to condense and really think about how long it takes to prep/cook/cool and the cost of food.. well, I just love it. I become friends with the recipes and really want them to turn out. Is that strange? I think so, but I’m not too terribly worried about it.

I had a hard time finding recipes that I wanted to try this week. Sometimes I just don’t want to cook, you know?? But then I think about how much healthier my cooking would be than eating Taco Bell every night and while fast food is super tempting…. it’s not worth it.
