Red Beans and Rice

I was thoroughly impressed at how little amount of time this dinner took. I got home a full half an hour before the hubs did and I was basically moving at turtle speed towards the end to make sure it was still hot for him.

This was a complete winner for a couple reasons:

1) I love white rice. Everything about it. It even saves my sanity sometimes.*
2) Sausage is probably my favorite meat. Which is strange cause I hate the idea of how sausage is made, BUT if I don’t think about it, it doesn’t bother me.
3) The time. This is a perfect meal for those quick nights where dinner is either microwaving a hot dog or ordering fast food. Now I cam make this, with a side salad, and be good to go in less than 30 mins.

*- I hate Chinese food. Actually, I BLOODY DESPISE it….to be perfectly honest. But Dear Hubby loves it… so when we go to buffets, I ladle up a heaping mound of white rice, drench it in sweet and sour sauce and take 3-4 crab rangoons and then go cry in my plate that I could be eating fake Mexican food at Taco Bell right now instead of… ooh. Got off topic. But yes, this is why white rice is my saving grace.

This is definitely on my “make again” list!

I am super excited that we both liked it so much. That is hard to accomplish with us….  just ask him when’s the last time we ate at a Chinese buffet! ;)
